We dry cure our Back Bacon cut from pork loin the traditional way, using salts to remove the moisture and intensify the flavour and then we finish it off by air-drying it for two weeks to maximize the taste.

Notes from the kitchen
This is bacon sarnie bacon, on fresh white bloomer with your favourite sauce. Ours is brown sauce, with a little scraping of English salted butter. All washed down with a cup of black coffee and a glass of fresh English pressed apple juice
