We dry cure our Collar Bacon cut from pork shoulder the traditional way, using salts to remove the moisture and intensify the flavour and then we finish it off by air-drying it for two weeks to maximize the taste

Notes from the kitchen

With this rare but amazing cut of bacon, you get the marbling you’d expect from streaky and the meat content you’d expect from back bacon, all coming together to give an incredible depth of flavour.  Grilled or fried, it crisps up beautifully, served with a poached egg and hollandaise sauce on an English muffin, it’s our favourite kinda brunch!
