Piri Piri Beer Can Chicken from Hill House Farm

Impress your BBQ guests with this spicy BBQ’d beer can chicken, either BBQ it or bake it in the oven, you can make the spice blend or just buy a ready-made blend.

Serves: 4 people


1 1.8kg whole Chicken
1 can Surrey Brewery Pale Ale

For the Marinade
½ tsp chilli flakes
¼ tsp onion granules
¼ tsp garlic granules
¼ tsp sea salt
¼ tsp orange zest
¼ tsp lemon zest
¼ tsp smoked paprika
¼ tsp cracked black pepper
¼ tsp ground coriander
¼ tsp mixed herbs
4 tbsp olive oil


    1. Place the marinade ingredients into a bowl. Mix until well combined. Rub the marinade all over the chicken and into the cavity. Place the chicken covered in the fridge for at least 2 hours to marinate.

    2. Remove the chicken from the fridge, open the beer and pour half of the beer into a glass (chef's perk!).  Make a few more holes in the top of the can then push the can into the chicken’s cavity. Place the can in a beer can holder if using one.

    3. Prepare your barbecue for indirect cooking (around 200oC) Place a foil container at the bottom of the BBQ, place the chicken onto the barbecue and roast by an indirect medium heat for around 1-1 ¼ hours.

    4. When the chicken is cooked through and reached a temperature of at least 71° at its thickest part, remove the chicken and allow to rest before serving.
