Irish Stew made with Hill House Farm Diced Mutton
Try this traditional Irish Stew recipe made with Hill House Farm diced mutton.
This flavoursome lamb stew is ideal to serve with soda bread and butter.
Makes: approx 4 people
Ready in : approx 1.5 - 2 hrs
600g Diced Mutton from Hill House Farm
1 tbsp Oil
200g Onions, chopped
Fresh Thyme, 4 sprigs
2 Bay Leaves
50g Pearl Barley
700 ml Lamb Stock
300g Carrots, peeled and evenly chopped
500g Potatoes, peeled and evenly chopped
1. Over a high heat, drizzle the oil into the base of a heavy based pan with a fitted lid, add in the mutton and fry for a minute or two until slightly coloured.
2. Add in the onions, thyme, bay leaves and barley, fry for a further minute. Pour in the stock and bring to a boil, reduce the heat and gently simmer with the lid on for one hour.
3. Check and adjust the seasoning then add in the potatoes and carrots, simmer for a further 30 minutes until the vegetables are tender.
4. Serve with chunks of Irish soda bread slathered in butter
